Diabetes: 2 Quick Healthy & Tasty Recipes for You to Try!

Here are 2 simple nutritious recipes that mums with gestational diabetes can try -- a savoury meal and a healthier dessert.


(1) Baked Dijon Salmon served with Mediterranean cauliflower rice – salmon is a good source of protein and omega 3. Finally, you can enjoy having some “rice” which is low on carbs.


Mediterranean Cauliflower Rice Instruction: Sauté diced onion in non-stick pan and then add the grated cauliflower. Add some chopped fresh herbs like coriander and mint leaves, some lime juice and salt, pepper and red chili flakes.



Baked Dijon Salmon

Salmon fillets – 2

Dijon mustard – 1 tbsp

Olive oil – 2 tsp

Lemon juice – 2 tsp

Parsley – 1tsp

Red chilli flakes – ½ tsp

2 crushed/minced garlic

Black pepper powder – ¼ tsp

Salt to taste


Instructions:

  1. Marinate – Mix dijon mustard, pepper powder, salt, red chilli flakes, lemon juice, olive oil and minced garlic together.

  2. Rub this all over the salmon fillets. Cover with plastic foil and place in refrigerator for 30mins.

  3. When 20minutes has passed, pre-heat oven to 180 degree Celsius for 5-10mins. Place the salmon fillets on a lined baking tray and bake for 15-20mins. Place the fillets skin side down.

  4. Serve salmon on a pile of cauliflower rice and some salsa for added tanginess.



Tofu Pudding

this creamy dessert is made without added sugar and is a good source of protein.



Soft egg tofu – 1 packet/tube

Strawberries – 4-5 medium size

*Low fat milk – 1/2 cup

*you can use soymilk or lactose free milk is you are lactose intolerant


Instructions: Blend the strawberries with the milk. Add in the tofu. Blend well. Portion out into small bowls or cups. Chill for 15mins and serve cold. Serves 2 pax.
